I'm back! Yes, we do have Granny Smith apples here in the US, Mad. As you know they are a crisp, somewhat tart green apple. I find them totally PERFECT for an apple pie! But they are too tart for applesauce and I have to add sugar, which I prefer to not do. The Honeycrisp is also a great apple for eating. Here in Missouri we use one called Jonathan for making apple butter. But last year I found the perfect apple for making applesauce and only adding cinnamon and nutmeg, but no sugar. It's a Jonagold which is a cross between the more tart Jonathan and the sweeter Golden Delicious. But due to a killing late frost last spring, they didn't have any!! So I got half a bushel of Jonathan and half a bushel of Golden Delicious. I think we're going to make the applesauce this week, so I'm hoping it will be good!

So, personal preferences, Draclvr !! I like my apple sauce to be quite "tart" and in fact, although I do add a very small amount of sugar, I also add lemon juice to make sure it stays zingy [And I do the same for apple pies - where I also use Granny Smiths.] We do have Jonathon apples here in the UK and I've bought them very occasionally but they are not a particular favourite for me.

I'm not a huge fan of Jonathons either... but people here make apple butter with them which uses large quantities of sugar and spices. They do make an excellent apple butter!

It's a "thing" here! Properly done, it's a couple of bushels of apples peeled, cored and sliced and placed into a huge copper kettle over a small wood fire. 10 pounds of sugar and spices like cinnamon and nutmeg are added. It is stirred constantly for MANY hours with a special wooden paddle until it becomes very thick and dark as the sugars caramelize. It is then preserved in glass jars. We get about 15 different types of apple here in BC, though I've never heard of Jonathan apples.
Apple butter is a "thing" here, too. My grandmother also used to make peach butter, which was heavenly. She never gave anyone her recipe, preferring it to be a secret, so it died with her.
I think I'm quite ready for another adventure.

Soot, I've been meaning to ask one of my siblings if they managed to tease out at least the basics of the peach butter recipe. Both of them are serious cooks and would have been curious. My aunt, who is also a great cook, thought she had the recipe but it was never quite the same.
It's a lovely day here. We have a few chores around the garden, but I was hoping for a drive somewhere, and maybe lunch. We'll have to see how it goes.
I think I'm quite ready for another adventure.
